Kale

"Organic Kale Salad"

1 large bunch organic Kale,
2 small organic apples,
1/2 small organic onion,
2 teaspoons ume plum vinegar
(sold at most health food stores
& at every Asian market).


Wash the kale and apples, cut kale(like you would romaine lettuce for a salad) including stems, cut apples into small squares, dice onion. Using 1 1/2 tablespoon of extra virgin olive oil, over medium heat, saute kale stems first for 2-3 min (they are very firm), then add kale, onions, and apple (all at the same time)in a pan until kale is soft (not wilted). Put "Kale Salad" in a serving dish and garnish with 2 teaspoons ume plum vinegar. Stir well.

Enjoy! Serves 2-4 people.
You could also put your kale salad over brown rice to make it more of a meal.

I became vegetarian over 14 years ago. The longer I was vegetarian, the more I researched about the health benefits of an animal free diet. I then became vegan over 8 years ago.I'm a firm believer that our bodies thrive on a whole foods based diet. A great motto regarding what to eat is, "If it grows from the earth, EAT IT. If it's been altered in any way, LIMIT IT."
